peanut butter cookie brownies

I originally had a different post planned for today but I started writing a ridiculously long story that I ran out of time to finish so here we are. Hopefully you aren't too disappointed because these "brookies" are way better than the outfit I was gonna post, anyway. 

Think peanut butter cookie meets brownie stuffed with peanut butter & chocolate chips. Fudgy, rich, and the perfect mix of chocolatey peanut butter goodness.

I used a box mix for the brownies because I'm lazy like that, but you could totally use your favorite homemade brownie recipe (if you're an overachiever like that). I prefer the Betty Crocker brownie mixes, especially the Supreme Chocolate Chunk which I used for this recipe. And then added extra chocolate chunks. Because clearly, I have a problem.

The peanut butter cookies clearly steal the show and are what makes this recipe so delicious. You've probably seen brookies made with chocolate chip cookies, but it's high time peanut butter cookies started getting more credit. They have a more chalky consistency compared to chocolate chip cookies, which actually works better when mixed with the fudginess of brownies. If Reese's Peanut Butter Cups could come in brownie form, this would be it.

Have I convinced you to make them yet? Really I just want someone else to get caught eating out of the pan with a fork at 3am so I won't be alone in my pathetic embarrassment. Please tell me some of you have woken up hungry during the middle of the night, only to remember a yummy treat in the kitchen? Then tiptoed out to devour it? I'd go into the whole feeling sick & guilty the next morning thing but that kind of ruins the story. Also Zach really needs to stop being such a light sleeper. It's so much better before someone sneaks up on you and ruins the gluttonous moment.

Ingredients:
-1 box brownie mix (and ingredients on box)
-1 pkg. peanut butter cookie mix (snack size)
-1 pkg. peanut butter & chocolate chips (1-2 cups)

Directions:
1. Prepare brownies as directed on the box. Stir in 1 cup of peanut butter & chocolate chips. Pour into pan. 
2. Prepare peanut butter cookie dough as directed on package. Once ready, spoon out 1 inch balls and drop evenly onto brownie batter in pan. You should have 4 rows of 3 cookie balls.
3. Sprinkle additional peanut butter & chocolate chips on top of mixture and bake as stated on brownie box.
