pumpkin spice rice krispies recipe

Y'all know by now that I'm obsessed with all things pumpkin. When I saw this recipe floating around Pinterest, I had to try it for the Pumpkin Party Bear and I went to on Monday. Everyone brought a treat with pumpkin in it; there were pumpkin spice donut holes, two different pumpkin dips, pumpkin pie, pumpkin spice cake balls, and these pumpkin rice krispies. Don't mind me, I'm trying to set a record for the most times saying "pumpkin" in one blog post; think I'm already there.

These rice krispie treats were so simple to make and came out really yummy! To be honest, the kids didn't love them. I even saw one boy spit out a bite, followed by shouting, "Yucky!". However, us mommas enjoyed them. If you have a pumpkin-loving palette, pretty sure these are right up your alley.

Only six ingredients and about ten minutes to whip up. That's a recipe even I can handle.

The mom that cheated and brought donut holes from Dunkin Donuts (yes Tisha, I'm looking at you) had the right idea. If you have a DD near you, go grab a dozen pumpkin spice donut holes. Your life will be forever changed for the better.

Easy, yummy, and the perfect fall treat. They're pretty light, so you can eat about six and not feel guilty. Pumpkin's healthy, right?

Ingredients:
4 cups mini marshmallows
6 cups rice krispie cereal
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/4 cup pumpkin puree
3 tbsp. butter

Directions:
1. Spread your ¼ cup pumpkin puree on cheese cloth or between several paper towels and let it sit for 45 minutes, getting rid of the excess moisture in the pumpkin (alternatively, reduce pumpkin puree to ⅛ cup or omit entirely).
2. In a large pan, melt your butter on medium low heat and add 4 cups mini marshmallows.
3. Add your pumpkin puree to your melted marshmallows along with your cinnamon and pumpkin pie spice.
4. Toss in your rice krispie cereal and stir.
5. Pour your treat mix into a 9x13 greased baking pan. Cover your treat mix with parchment paper and press your treat mix into the pan.
6. Allow your treats to cool and enjoy!

Bear and I are headed to the mall; we haven't been in over two weeks which has to be some kind of record. He loves the playground and reading books in Barnes & Noble, and I love...everything else. Especially Nordstrom & the food court. The biggest decision of my day will be choosing Chick Fil A or Auntie Anne's. For the record, I do love Barnes & Noble, too. A good book accompanied by a vanilla latte is pretty much heaven.
