the best crockpot mac 'n cheese
We LOVE mac 'n cheese in this house. It's a staple that we absolutely couldn't live without, especially Bear. His dinner requests consist of grilled cheese, mac 'n cheese, and cheese pizza. See a common theme there?
I've tried several slow cooker mac 'n cheese recipes and this is by far our favorite. It's creamy, filling, and the ultimate comfort food. This isn't just a side dish- we eat it as a meal in itself. It's also one of those recipes that's even better the next day, so be sure and save the leftovers!
Ingredients:
16 oz. elbow macaroni
12 oz. Velveeta Cheese, cut into cubes
16 oz. sharp cheddar cheese
1-12 oz. can evaporated milk
1 cup milk
1/2 stick butter
1 teaspoon salt (I throw in a pinch of pepper, too)
1 teaspoon olive oil

Directions:
Spray your slow cooker insert with non-stick spray (I use these Reynolds Liners because they're amazing and make clean up SO easy!).
In your insert, pour the evaporated milk, milk, pasta, butter, salt, olive oil, and give a little stir.
Cook on low for 4 hours, stirring occasionally.
Add your Velveeta cubes and sharp cheddar, and turn the cooker up to high. Let them sit for about 20 minutes, then take the lid off and stir. They should be melted but if not, cook the macaroni for 10 more minutes.
Stir and enjoy!
I double this recipe and it makes a lot of mac 'n cheese. A ridiculous amount, really, but we can eat off of it for several days. We also like to get creative and have a burger night the day after making this so we can add mac 'n cheese to our burgers. If you haven't tried it, don't knock it! Delicious.

I'm a stylist at Kate Spade this week! It's a long story and I'm not sure what all I'm allowed to reveal, but I'm working over there and you should definitely stop by and say hi! Only three stylists from Snap+Style were given the job; I had a call with my boss and our CEO, Anna Jensen, this morning to discuss it all. I nearly peed my pants. I'm working a ton of hours this week, way more than usual, so blogging will be on the back burner for a few days. But I'm thankful for this opportunity with KS!
Bear also has meet the teacher tomorrow for his Mother's Day Out program, which he's not excited about. I, however, am counting down the minutes until MDO starts back next Tuesday. I love spending time with my baby boy but it's so hard to work when he's home; we're constantly playing Star Wars, hide 'n seek, and anything that involves major mess making. I know he'll be in great hands and his school curriculum is amazing; they even take a Spanish class. The structure is good for him, plus he's a social Bear and loves to make friends. He only goes for a few hours Tuesdays and Thursdays, so it'll be a good time for me to tackle work and for him to give his teachers a run for their money.
