How many times have you had a major sugar craving, only to find that there's not a single cookie or candy bar in the house? That's not actually a problem in our house because I keep that stuff stocked like the Willie Wonka Factory (y'all know my sweet tooth!) but for most people, this is sadly a common occurrence. There's nothing worse than craving something sweet only to find that you can't satisfy that need without getting in the car and driving to the nearest convenience store. Unless, of course, you're familiar with the most ingenious invention ever, the mug cake.
Mug cakes are the perfect serving for one and have all the deliciousness of a regular cake without the lengthy baking time. These tasty little treats are cooked up in a quick sixty seconds in the microwave. I'm telling you, genius. I can't take credit for the idea because I didn't think of it, but I do fully support and stand behind anything that's this easy and decadent.
Mug cake recipes come in all different sorts of flavors from rich chocolate to pina colada, but this snickerdoodle happens to be my favorite (and yes, I've tried them all). It really does taste like a snickerdoodle cookie, warm out of the oven in all it's ooey-gooey-sugary splendor. The best part? There's a very good chance you already have all the ingredients on hand. So the next time your tummy gives a little rumble for some dessert and you finished the Oreos off the day before, you know what to do.
Snickerdoodle mug cake is a moist, dense cake spiced with cinnamon and layered with cinnamon sugar. If Zach wants one too, which is every time, I'll double the recipe and whip up one for both of us. He especially loves when I give him the choice between a Mama Bear or Blogging Day mug.
If I'm feeling extra indulgent, I'll even put a scoop of vanilla bean ice cream on top just to make sure I don't leave any potential cravings (or future cavities) out. I've been making this recipe for years and I think I've finally tweaked it exactly to my liking- I hope you'll love it just as much!
Ingredients:
1/2 cup + 2 tablespoons all-purpose flour
3 tablespoons sugar
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 cup milk, at room temperature
2 tablespoons butter, melted & cooled
1/2 teaspoon vanilla
For layering/topping:
1 tablespoon sugar
1/2 teaspoon cinnamon
Directions:
In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly, completely combined, with no streaks of any ingredients remaining. Blend in milk, butter, and vanilla until batter is smooth. Into a 14-ounce (or larger) microwave-safe mug, scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar. Microwave on high for 1 to 1 1/2 minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.

I had such a fun evening- Zach watched Bear and I got to have a girls night! I met my friend Aimey for a photoshoot and we headed to meet some other friends for dinner at Cru in Market Street which was delicious. After dinner, we walked over to the threatre to watch La La Land, which I've been dying to see. I won't spoil it for those of you who haven't seen it yet, but it definitely wasn't what I was expecting. I liked it but didn't love it....though I did love the music and every second Ryan Gosling was on screen. Goodness he's attractive. The fact that he learned to play the piano, incredibly well might I add, specifically for this role is pretty sexy in itself. Sorry Zach- you're still my main squeeze! Who needs a piano man when you're got the best wood worker in town? :)
