red velvet white chocolate chip cookies

Red velvet cake is Zach's flavor of choice when it comes to dessert, so I'm always looking for new RV recipes to try. He can be a tough critic when it comes to food so I was thrilled when these cookies passed the test. Dunk them in milk, eat them warm out of the oven right off the spatula, or crumble them up over vanilla ice cream. There's no wrong way to chow down on these delicious cookies.

They're rich, chewy, and very very sweet. I can't wait to make more and deliver them to all our neighbors at Christmas!

Ingredients:
3/4 cup butter, softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 Tbsp vanilla extract
1 1/4 cups red velvet cake mix (the dry mix)
1 1/4 cups all purpose flour
1/2 tsp baking soda
1 1/2 cups white chocolate chips

Directions:
1. In the bowl of a stand mixer, cream together the butter, brown sugar and white sugar with the paddle attachment for about 2 minutes, or until creamy and smooth. Beat in the egg and the vanilla to combine. Lastly, add in the red velvet cake mix, flour, and baking soda until a soft dough has formed. Stir in the white chocolate chips.
2. Chill the mixture in the fridge for at least two hours, or overnight if possible. Chilling is a must as it prevents the cookies from spreading into one giant cookie while baking.
3. Once dough has chilled, preheat oven to 350 degrees F. Drop rounded Tablespoon-sized balls of dough onto a lightly greased cookie sheet, keeping about 2" apart from one another. Bake for approx. 9-11 minutes. Cookies may appear slightly undone as they'll continue to set after they come out of the oven.

Funny story, y'all. I'm working on a current collaboration with a brand (you'll see who soon!) and since they reached out to me, I just figured they had done their research on my blog/social media. When I was throwing around ideas for a sponsored post theme with the PR lady, I said something like "I'd love to get some everyday activity lifestyle shots with Bear". She loved the idea, luckily, and sent over the contract today. I'm bad about reading through lengthy paperwork but it's a good thing that today I decided to actually read the contract. Three different times, it stated "The media content will show a lifestyle post with influencer's dog, Bear, on an outdoor adventure". I could not stop laughing. We know multiple people with dogs named Bear, so I totally get it. But still, lady. You're way off.

I need to go for a nice long walk this evening because I've eaten four Crave Cupcakes (two were mini!), Lord knows how many Sour Patch Kids, & Dominos Pizza today. Oh and Crave has the most amazing cappuccino where they sweeten the coffee with a big ol scoop of vanilla cupcake frosting. Heavenly but so sinful. Too bad that walk won't happen because A-it's way too hot in Houston and B-Bachelor in Paradise needs to be watched. Anyone else a fan of that crazy show?!
