cadbury creme egg brownies

You all know by now my love for Cadbury Creme Eggs, and brownies, and all things sweet in general, so this recipe should come as no surprise to you. And while I pretty much rave about every dessert I post on here, this one definitely ranks at the tip top of the charts. If you love chocolate in any shape, form or fashion, this one is for you.

I combined my favorite homemade brownie recipe with my favorite treat in the whole world (Cadbury Eggs, of course!) for an over-the-top dessert that is perfect for Easter. Or any time of year, really, if you're smart enough to buy a boatload of Cadbury Eggs on sale after the holiday and freeze them (years of practice over here). 

These brownies are incredibly fudgy and rich, combined with an ooey-gooey Cadbury Egg center. And because that's just not sweet enough, I added vanilla frosting and sprinkles to take these bad boys over the top. The frosting also serves to cover the hole where the egg was pushed in, but who really cares about presentation when something tastes this good. You won't be able to stop at just one (or four), promise.

If you are short on time or have a box mix that you love, you certainly don't have to make these brownies from scratch. Whatever you do, just don't forget the Cadbury Eggs. You might wanna buy an extra box just in case a few make their way into your mouth during the unwrapping process (not that I know from experience or anything...). 
 

Ingredients:
1 cup (2 sticks) of butter
⅔ cups of unsweetened cocoa powder
4 eggs
2 cups of sugar
1 cup of flour
1 tsp of vanilla
½ tsp baking powder
½ tsp salt
12 mini Cadbury Creme Eggs
vanilla frosting
sprinkles

Directions:
1. Preheat oven to 350F.
2. Spray a muffin tin with a non-stick cooking spray.
3. Put the butter in a microwave-safe bowl and melt the butter in the microwave. Mix the cocoa powder with the butter. Whisk the eggs, sugar and vanilla in another large bowl. Add the butter and cocoa mixture to the egg and mix so everything is combined. Add flour, salt and baking powder to the liquid mixture, and stir until combined (don't overmix).
4. Pour the brownie batter into the muffin tin (filling each about 2/3 full), put in the oven on the middle rack and bake for 25 minutes.
5. Allow brownies to cool for 3-5 minutes (you don't want them cooled completely). During this time, unwrap all of the Cadbury Creme Eggs. Press a Cadbury Egg into the center of each brownie. 
6. Allow to cool complete and pipe frosting on top of each brownie (I use the Wilton's cookie frosting in a bag). Garnish with sprinkles.
